Remove useless proj:epsg from Item properties again (if added to assets)

Enable item validation in test_stac.py again. It is disabled right now due issues in the projection extension schema:
stac-extensions/projection#7

Enabled again by adding proj:epsg to the Items, which we may want to remove again in the future.
